I'm rubbish at electronics, and find the schematic diagram hard to follow. Can you add a diagram to the project of how to put the components on stripboard, where to make connections and where to cut tracks. That would be great and would make this much easier for electronics dummies like me.

Here is an example of a smilar project with a stripboard layout:

On that stripboard it seems that you just need to remove that one jump wire from pin 13 of the 4017 that goes to the battery - terminal. Then just solder the optoisolator directly to those pins that it requires. Drawing an image for this would be too time consuming as I don't have the rights to use their image to start with but I believe it shouldn't take you too much effort to figure out where to solder the connections from the optoisolator. Perhaps it would be easier to solder wires on the component side of the board and directly to the legs of those components that the optoisolator needs. When you get it working, see if you can alter the layout and make one final version with that opto sitting on the board like rest of the component.
